Gluten-free Christmas Crack is a delicious sweet and salty treat.
Gluten-free Christmas Crack is a combination of five ingredients: gluten-free saltine crackers, a caramel centre, and a chocolate topping sprinkled with decorations such as chopped nuts. I like using Schar's Gluten-Free Saltine Crackers, Hershey's Milk Chocolate Chips, salted chopped peanuts and a caramel make from equal parts butter and brown sugar.
If you can't find gluten-free crackers you can substitute plain Chex or gluten-free pretzels. For toppings: your favourite chopped nuts, Christmas sprinkles, gluten-free candies such as M&M's, crushed candy canes, Skor pieces, or broken up gluten-free chocolate bars.
Line your baking tray with tin foil sprayed with cooking oil or use a non-stick baking sheet. Line up your gluten-free crackers on the baking sheet. I had a couple of extras, so I crushed and sprinkled them on. You don't want the cracker layer to be too thick.
Use equal parts of butter and brown sugar to make the middle caramel topping. Add the two ingredients to a medium size pot and bring to a boil. Lower the heat slightly and boil for 3 minutes.
Here is what the caramel mixture looks like after 3 minutes. It is now ready to pour over the cracker layer.
Pour the hot caramel sauce over the cracker layer, and spread evenly using a spatula. Put in a 375 Fahrenheit oven for 5 minutes.
Here is what the caramel layer looks like after 5 minutes in the oven.
Right after removing the pan from the oven sprinkle on the chocolate chips.
Here is what the chips should look like after being in the warm oven for about 3 minutes.
Spread the chocolate chips into a nice flat even layer.
Sprinkle the top with your favorite decorations. I like using crushed salted peanuts, but you can use your favourite nuts or gluten-free candies.
