Creamy, cheesy cauliflower soup is the perfect comfort food for chilly days. It's simple, gluten-free, and absolutely delicious. Whether you're using fresh or frozen cauliflower, this soup will warm you up and satisfy your cravings.

Ingredients You'll Need

To make this easy gluten-free cauliflower soup, you'll need:

  • Cauliflower: Fresh florets or frozen - both work great!
  • Aromatics: Onion, carrot, and optional celery for depth of flavour.
  • Butter & Oil: A blend to prevent burning while sautéing.
  • Broth: Chicken or vegetable broth, but make sure it's gluten-free.
  • Cream or Milk: For creaminess. I like to use Half & Half.
  • Cheese: Choose your favourite! Cheddar and mozzarella are my go-to combo.
  • Seasonings: Garlic (fresh or powdered), salt, and pepper.

Step-by-Step Instructions
  1. Prep the Veggies
  2. Dice the carrot, onion, and celery (if using). Prepping these ahead makes cooking seamless.

    Butter and oil are a dynamic duo for sauteing!


  3. Start Cooking
  4. Heat butter and oil in a medium pot over medium heat. The oil helps prevent the butter from burning.



    Add onions and carrots to the pot
    Time to add your aromatics.

  6. Once the butter is melted add your diced veggies and saute for 3 to 5 minutes until the onions are translucent. Keep an eye on it, so that it doesn't burn. Stir frequently.

  7. Add the Cauliflower
  8. Stir in the cauliflower florets. If using fresh cauliflower, ensure that they're cut into bite-sized pieces. Cook for another 2 to 3 minutes on low heat to let the flavours meld.

    Pick your favorite broth: chicken or veggie works perfectly!


  9. Pour in the Broth
  10. Add two cups of broth to the pot and stir.

    This time I used a Knorr chicken bouillon cube. Always read the ingredients of the bouillon you use. Not all are gluten-free. But, in Canada BROW (barley, rye, oats, wheat) can't be hidden, and must be in the ingredients list if used either in the list itself behind the ingredient it is in or in a "contains statement".

  11. Add the seasonings and Simmer.
  12. Garlic, salt and pepper are a must for me.

    Let everything simmer for 10 minutes until the veggies are tender.

    Puree the soup to your desired consistency.


  13. Blend & Add Cheese
  14. Add the milk/cream and continue to cook on low heat for about 2 minutes. Remove the pot from heat. Blend the soup using an immersion blender or a standing blender (carefully - hot liquids can splatter!). Note: When using a standing blender only fill half-way with hot liquids, and cover lid with a towel. If you fill it full it can overflow and cause burns. Blend to your preferred consistency, smooth or chunky. Stir in your shredded cheese until melted. This step adds richness and that signature cheesy goodness.

  15. Serve & Garnish
  16. Ladle the soup into bowls and garnish with your favourite toppings such as grated cheese, green onions, chopped bacon, or chives. Serve with gluten-free bread or crackers for a complete meal.

Gluten-Free Cauliflower Soup Recipe

Ingredients
  • 1 medium cauliflower (or 500g frozen florets)
  • 1 medium onion, diced
  • 1/2 cup carrot, diced
  • 1/4 cup celery, diced (optional)
  • 1 clove garlic, minced (or 1 tsp garlic powder)
  • 2 cups chicken or veggie broth
  • 1 cup milk, or half and half cream
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 1/2 cups shredded cheese (reserve 1/2 cup for garnish)
  • salt and pepper to taste
  • parsley, chives, green onion and/or bacon for garnish (optional)
Directions
  1. Prep Vegetables: Dice the onion, carrot, and celery (if using).
  2. Saute: Heat butter and oil in a pot. Add the diced veggies and saute until the onions are translucent. Add cauliflower and cook for a few minutes.
  3. Simmer: Pour in the broth. Bring to a boil, then lower the heat and simmer for 10 minutes until the veggies are tender.
  4. Blend: Add milk or cream, then blend the soup until smooth or your desired texture.
  5. Cheese It Up: Remove from heat and stir in shredded cheese until melted.
  6. Serve: Ladle into bowls. Garnish as desired and enjoy!
