Creamy, cheesy cauliflower soup is the perfect comfort food for chilly days. It's simple, gluten-free, and absolutely delicious. Whether you're using fresh or frozen cauliflower, this soup will warm you up and satisfy your cravings.
To make this easy gluten-free cauliflower soup, you'll need:
Dice the carrot, onion, and celery (if using). Prepping these ahead makes cooking seamless.
Heat butter and oil in a medium pot over medium heat. The oil helps prevent the butter from burning.
Once the butter is melted add your diced veggies and saute for 3 to 5 minutes until the onions are translucent. Keep an eye on it, so that it doesn't burn. Stir frequently.
Stir in the cauliflower florets. If using fresh cauliflower, ensure that they're cut into bite-sized pieces. Cook for another 2 to 3 minutes on low heat to let the flavours meld.
Add two cups of broth to the pot and stir.
This time I used a Knorr chicken bouillon cube. Always read the ingredients of the bouillon you use. Not all are gluten-free. But, in Canada BROW (barley, rye, oats, wheat) can't be hidden, and must be in the ingredients list if used either in the list itself behind the ingredient it is in or in a "contains statement".
Garlic, salt and pepper are a must for me.
Let everything simmer for 10 minutes until the veggies are tender.
Add the milk/cream and continue to cook on low heat for about 2 minutes. Remove the pot from heat. Blend the soup using an immersion blender or a standing blender (carefully - hot liquids can splatter!). Note: When using a standing blender only fill half-way with hot liquids, and cover lid with a towel. If you fill it full it can overflow and cause burns. Blend to your preferred consistency, smooth or chunky. Stir in your shredded cheese until melted. This step adds richness and that signature cheesy goodness.
Ladle the soup into bowls and garnish with your favourite toppings such as grated cheese, green onions, chopped bacon, or chives. Serve with gluten-free bread or crackers for a complete meal.
