Here are the ingredients I used.
You will also need a baking pan (cookie sheet), parchment paper, blender or food processor, large bowl and spatula.
I found using a food processor worked well to blend the cottage cheese and eggs. You could also use a blender. If you don't have any of these then a potato masher or push the batter through a sieve. You want the batter to be smooth. After you have the batter mixed you can add your optional ingredients such as finely chopped green onions.
Pour the batter onto a greased parchment paper lined baking sheet. You want the batter to be spread as thin as possible without any holes.
Bake the cottage cheese wrap in a preheated 350 Fahrenheit oven for about 20 to 30 minutes. You want the edges to just be turning brown and the wrap to be slightly soft..
Here is what the cooked wrap looks like. Remove from the oven and let cool for about 5 minutes and then fill with your favourite fillings and enjoy.
I got two wraps from this recipe. The cottage cheese wrap is flexible and a good source of protein. I recommend using the wraps right away.
I filled mine with mayonnaise, lettuce and roast chicken slices.
What do you like to fill your gluten-free cottage cheese wraps with?
