Slice of yummy gluten-free Orange Cake.
If you like orange flavour then this is the gluten-free Orange Cake to try. It has a lovely orange flavour and the texture of a pound cake.
It is important to mix the grated orange rind (aka orange zest) with the sugar. The oils from the zest enhance the orange flavour when mixed with the sugar. The batter is quite thick as you can see in the photo.
Here is what the cake looks like when just out of the oven. Check on the cake after 20 minutes. The cake is done when a toothpick comes out clean.
While the cake is baking make the fresh orange sauce. Start with less sugar and add more to your taste. It is important to heat up the juice either in the microwave or on the stovetop.
Right after you take the cake out of the oven poke holes in the top with a toothpick and while it is still warm, drizzle half of the orange sauce over the cake. Then sprinkle the top with some sugar.
Gluten-Free Orange Cake
Ingredients
- 1/2 cup butter
- 1/2 cup plus 2 Tablespoons sugar (the 2 Tbsps are for sprinkling on the cake after it is baked.)
- 1 Tablespoon grated orange rind
- 2 eggs
- 3 Tablespoons fresh orange juice
- 1/2 cup almond flour
- 1 cup gluten-free flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2/3 cup sour milk (add 1/2 teaspoon of lemon juice to regular milk)
Orange Sauce
- 1/2 cup fresh orange juice
- 1/4 cup sugar
Directions
- Pre-heat oven to 350 Farenheit.
- Line an 8x8 inch cake pan with parchment paper and spray with cooking oil.
- Grate the rinds of 1 to 2 oranges to get a tablespoon of orange zest. If you have a bit more that is ok, it will intensify the orange flavour. Then juice the oranges. You want to get about 3/4 cup of fresh orange juice. You'll use 3 tablespoons in the cake batter and the rest in the sauce.
- Mix the grated orange rind (zest) with the sugar.
- Blend together the butter and sugar until light and fluffy.
- Add the eggs and fresh orange juice and beat thoroughly.
- Add the almond flour and mix.
- Mix the baking powder, baking soda and gluten-free flour and add to the batter and mix.
- Add the sour milk to the mixture and beat for about 5 minutes.
- Let the batter sit for about 10 minutes and then pour into the cake pan.
- Bake for 30 minutes, until a toothpick comes out clean.
- For the sauce: Mix the fresh orange juice and sugar and either bring to a boil or heat in the microwave to melt the sugar.
- When the cake is finished baking, leave it in the pan and poke a few holes with a toothpick and pour the orange sauce over as soon as taken from the oven. I pour about half over the cake and leave half to pour on individual slices. Then sprinkle 1 to 2 tablespoons of sugar on top of cake. Sometimes I double the sauce to use on individual slices.
I like to use the leftover orange sauce to drizzle on the individual slices. I often double the Orange Sauce recipe, so that we have more extra sauce.
